Pea and feta quinoa salad


  • 1cupquinoa
  • 1 cup Bulgur wheat
  • 6cupswater/stock
  • pinch of salt

for the salad

  • 3cupsfrozen peasblanched
  • 1-1½cupscrumbled feta cheese
  • 1largered onionthinly sliced
  • pea tendrils, for serving(optional)

for the lemon dressing

  • ¼cupolive oil
  • ¼cuplemon juice
  • 1tspsalt
  • ½tspblack pepper


  • mix the quinoa, wheat and stock/water during a pan and season with salt. wake up a boil and simmer uncovered till the liquid has been absorbed. flip the warmth off and canopy with a lid then permit to steam for 10-15 minutes till the quinoa grains area unit hard. Fluff with a fork and permit to chill to temperature.
  • mix the parched quinoa and wheat with the parched and cooled peas, feta cheese and onion.
  • combine along the dressing ingredients then pour over the dish.
  • Add the pea tendrils if serving now otherwise keep the dish lined within the refrigerator for up to five days.
