Soba noodles chirashi


  • 1 1/4 cup water
  • 1/2 cup mirin
  • 1/2 cup soy sauce
  • 2 tablespoons bonito flakes
  • 250g soba noodles

Toppings (optional)

  • fish cakes
  • shiitake mushrooms
  • boiled egg
  • chopped nori (dried seaweed)
  • grated daikon
  • grated ginger
  • chopped scallions
  • wasabi
  • coriander
  • ichimi or shichimi pepper


  • to create the sauce, place the water, soy, mirin and dried fish flakes in a very little pot and simmer on low till the sauce is incredibly heat, however not boiling hot.
  • Cook the soba noodles per package directions, drain and rinse underneath cold water.
  • Divide the noodles into 2 bowls, add the toppings and pour a touch sauce over. place the rest of the sauce in a very little sauce pot and serve with soba, for those who’d prefer to add additional flavor to their dish.
