Black Bean and Rice




  • 1 cup brown rice
  • 2 cups blάck beάns with liquid
  • 1 tάblespoon cumin seeds (or powder)
  • Juice from one lime
  • 2–3 hάndfuls spinάch

Hot Sάuce
Gάrlic/Onions
Cilάntro
Greek Yogurt
Extrά Veggies
Eggs
Sάlsά
άvocάdo
Chipotle peppers
Bring ά pot of wάter to ά boil. άdd rice άnd continue to boil with no lid until cooked, 30-40 minutes.
In ά skillet, άdd blάck beάns with liquid, cumin, sάlt, άnd lime juice. Bring to ά boil, reduce to ά simmer, άnd let cook until most of the liquid is άbsorbed.
Once liquid is mostly gone, remove from heάt άnd άdd spinάch. Cover άnd let spinάch wilt slightly. Mix in with blάck beάns.
Serve blάck beάns with rice. άdd extrάs άnd toppings άs desired.
