Homemade Jammie Dodgers (Vegan & Gluten-free)

Homemade Jammie Dodgers (Vegan & Gluten-free) One of my favourite indulgent treats is Jammie Dodgers! If you don’t live in the UK you may have never heard of these fun titled biscuits (also known as cookies in other parts of the world!). They’re a popular British treat made up of two shortbread biscuits with a layer of strawberry jam sandwiched in between



Ingredients:
1/2 cup (85g) plain gluten-free flour 
1/4 cup (25g) ground almonds
1/2 tsp baking powder
1/8 tsp salt
2 tbsp coconut sugar or brown sugar
1 tbsp maple syrup
2.5 tbsp coconut oil, melted
1.5 tbsp milk of choice
1/4 tsp vanilla paste or extract
For the jam filling
Sugar-free jam or homemade chia jam

Method
Preheat your oven to 180°C (160°C fan assisted)/ 350°F
In a bowl, mix together the flour, ground almonds, sugar, baking powder and salt.
Pour in the coconut oil, milk, maple syrup and vanilla paste. Mix to form a dough.
