Walnut and Orange Scones

These easy Walnut and Orange scones have a delicate citrus flavour which pairs perfectly with clotted cream and raspberry jam. So tasty!

300 grams self-raising flour
60 grams unsalted butter, cut into cubes and chilled
60 grams caster sugar
50 grams chopped walnuts
1 teaspoon of baking powder
Pinch of salt
Zest of 1 orange
2 tablespoons orange juice
150 milliliters milk
1 teaspoon vanilla essence
Milk or egg wash for brushing on top

Pre-heat your oven to 200 degrees Celcius. Line a baking tray with parchment paper.
Add your flour and butter to a mixing bowl. Using your fingertips rub the butter into the flour until there are no large lumps of butter remaining and the mixture resembles breadcrumbs. A few pea-sized lumps of butter remaining is ok. Alternatively, you could use a food processor – pulse the flour and butter together until there are no large lumps of butter remaining.
