Cherry Crumb Bars

These adorable Cherry Crumb Bars are absolutely mouthwatering. They're filled with fresh cherries and both vanilla and almond extracts. They pack a powerful punch in flavor and texture



INGREDIENTS
CHERRY FILLING:
5 cups Northwest Cherry Growers cherries pitted and halved
2 tbsp. lemon juice
1/2 cup UNBLEACHED all-purpose flour (bleached flour toughens baked goods)
1 cup granulated sugar
1/4 tsp. sea salt
1 tsp. vanilla extract
1 tsp. almond extract
1  tsp.  cornstarch
CRUST AND STREUSEL TOPPING:
3 cups UNBLEACHED all-purpose flour (bleached flour toughens baked goods)
1 cup granulated sugar
1 tsp. baking powder
1/4 tsp. sea salt
1 tsp. almond extract
1 cup unsalted butter cold
1 large egg slightly beaten
1/2 tsp. vanilla extract
1/4 cup granulated sugar

INSTRUCTIONS
CHERRY FILLING:
Preheat the oven to 375°.
Spray a 9×13-inch glass baking dish with cooking spray and set aside.
To make cherry filling: Pit and halve the fresh cherries.
Place the cherries in a large mixing bowl and sprinkle with the lemon juice.
Toss gently to combine.
In a separate bowl, stir flour, cornstarch, sugar, salt and both extracts and combine.
Pour dry ingredient mixture over the cherries and stir with a wooden spoon to combine.
Set aside.
