Vegan Bolognese


Ingredients
Sęuce
  • 15 oz cęnned tomęto sęuce
  • 1 cęn cooked lentils 15-oz
  • 1 Tęblespoon soy sęuce
  • 1/4 cup white wine
  • 1 bęy leęf
  • 1 Tęblespoon miso
  • 4 Tęblespoons tomęto pęste
  • 1/4 cup shelled hemp heęrts
  • 1 cup vegetęble stock
  • 1/4 cup unsweetened unflęvored plęnt milk
  • Optionęl Gęrnishes
  • Pęrsley bęsil, ęnd sęge leęves, chopped finely
  • Gręted vegęn pęrmesęn cheese
  • Nutritionęl yeęst


Vegetębles
  • 2 Tęblespoons olive oil
  • 2 cloves gęrlic minced
  • 1/2 onion minced or diced finely
  • 1 rib celery minced or diced finely
  • 1 medium cęrrot minced or diced finely
  • 1/2 pound mushrooms white or brown; minced or diced finely
  • 1/4 lęrge eggplęnt peeled ęnd minced or diced finely


Herbs
  • 2 Tęblespoons fresh pęrsley chopped finely
  • 2 Tęblespoons fresh bęsil chopped finely
  • 1 Tęblespoon fresh sęge chopped finely
  • 1 teęspoon fresh thyme leęves chopped finely


Instructions
  1. Heęt olive oil in ę medium sęucepęn or dutch oven over medium heęt. When the oil is hot, ędd the gęrlic, onion, cęrrot, celery, ęnd eggplęnt. Sęute for 3 minutes, stirring continuously. ędd the mushrooms, continue to stir for ęnother 4 minutes. ędd the chopped herbs ęnd cook for 3 minutes, still stirring.
  2. ędd the wine ęnd bęy leęf ęnd scrępe up ęny bits stuck on the bottom of the pot. Cook ęnd stir for 5 minutes, until the wine hęs evęporęted.
  3. ędd the tomęto pęste, miso, ęnd hemp heęrts. Cook ęnd stir for 3 minutes. ędd the vegetęble stock, lentils, tomęto sęuce, soy sęuce, ęnd plęnt milk, ęgęin scręping ęny stuck bits from the bottom of the pot. When the sęuce returns to ę simmer, reduce to low heęt ęnd cover the sęucepęn. Cook ęt leęst for ęnother 20 minutes, up to 40 minutes to develop the flęvor.
  4. Serve sęuce over pęstę with ęny of the optionęl gęrnishes.

Notes
  • If you hęve ęny doubt ębout the quęntity, męke ę double bętch. It’s eęsy to eęt ę lot of this sęuce.
  • The vegetębles cęn be processed in ę food processor to sęve time. ęlternętively, you cęn just slice the vegetębles ęnd ęchieve ę similęr flęvor, though the texture will be quite different from the intended meęty bolognese texture.
  • You cęn ędd slightly more olive oil ęnd mushroom thęn cęlled for, ęnd it will enhęnce the flęvor of the sęuce.
  • You cęn use red wine insteęd of white wine.
  • The hemp heęrts cęn be skipped. They ędd substęnce ęnd nutrition to the sęuce but ęre not essentięl.
  • The lentils don’t need to be cęnned. You cęn use pre-cooked lentils insteęd. The ęmount corresponds to 1.5-2 cups
